DELICIOUS!!!!
I'm working on a midterm right now, but I had to post this recipe. We had it for dinner tonight and I just went back for seconds (three hours later) and it was still AWESOME!!
I really like fish (IF it is not overcooked), but my husband usually makes a face when he finds out that we're having fish for dinner. HOWEVER, this was a hit with the whole fam. We all loved it! And it's so easy and so fast. Here you go:
Pistachio Encrusted Tilapia Filets
1 pkg pistachios (abt. 1 1/2 to 2 cups??)
1 tsp. dried oregano
1 tsp. thyme
1/2 tsp. garlic powder
honey mustard
Grind pistachios in food processor or put in ziploc bag and pound them with a meat mallet until they are in small chunks. Mix pistachios with oregano, thyme, and garlic powder in a shallow dish. Rinse filets and pat dry. Add a little salt and pepper. Brush honey mustard on each filet (be generous... this is what holds the pistachio mixture on). Put filet in the nut mixture and scoop the mixture on top. Heat pan on medium low and add oil. Add the filets and cook about 3 minutes on each side. YUM!!!!!
Wish I had a picture, but it was gone too fast. I served it with a side of seasoned bowtie pasta and snow peas with proscuitto and pine nuts. This is only my second experience with proscuitto, but I don't think I like the taste very much. I was trying to use up the package.
Let me know if you try this recipe and have any tips. My pistachios got a little blackened toward the end and a lot of them fell off the fish. Let me know if you have solutions for this.
